QUINOA RECIPE (serves 4 people)
For the quinoa:
sauté 1 onion, 3 cloves garlic, 1 bell pepper + 1/2 a zucchini in a large pot with a little water. Add desired spices like cumin and black pepper. Once veggies are cooked, add in 2 cups quinoa, 1 can rinsed black beans + 4 cups water, stir to combine. Cover until boiling. Turn temp down to low and simmer with lid on until water is absorbed.
For the cashew sour cream:
Blend in the high speed blender (like the vitamix) 1 cup soaked raw cashews, 2 tbsp lemon juice, 1/4 cup water + sea salt to taste.
Toppings:
Any desired toppings like green onion, tomatoes, chili flakes or siracha, toasted sesame seeds, avocado, etc. Serve with lettuce cups or cabbage leaves!
