Veg Manchow soup –
Ingredients –
2 tsps oil
1 1/2 tblsps chopped garlic
1 tblsp chopped ginger
1/2 tblsp green chilly chopped
1/3 cup heaped each of cabbage, carrot, capsicum, cauliflower, beans, mushrooms(optional) (all finely chopped)
2 1/2 tsps
1/4 tsp chinese salt (optional)
5 cups vegetable stock
2 tblsps soya sauce
1 tsp sugar
1/3 cup heaped corn flour mixed with 1 cup water
1/4 cup spring onion leaves and tops
1 tsp white vinegar
Method –
1) Heat oil in a wok, add garlic, ginger and fry a little. Add green chillies and vegetables and mix well.
2) Add salt, Chinese salt (Aji no Moto) and fry for a minute. Then add vegetable stock, sugar and soya sauce and mix.
3) When it boils, add corn flour slurry, further boil for a minute. Add spring onion tops and leaves and serve hot with fried noodles.
