In this video, I’m making a super easy vegan side dish. To me it’s one of the best ways to eat beetroot as baking releases and enhances their natural sweetness. Spiced up with a popular Arab blend – za’atar, it will make a flavourful addition to your main meal.
You will need:
500g of betroot cut in 1/8ths
Juice from half a lemon
3 tbsps of za’atar*
1 tsp of salt
1 tsp of pepper
2 tbsps of olive oil

It is a blend of spices containing ground sumac, roasted sesame seeds and green herbs: thyme, marjoram, oregano. Za’atar comes from Arab countries and it’s popular mainly in Morocco, Egypt, Iran, Turkey, Lebanon, Israel and Armenia. You should easily get this spice in a supermarket.
