This soup is super hearty and perfect for cold days and or if you are feeling under the weather. This soup is also a great addition to your meals if you are currently going through a weight loss journey as it has starch, legumes, veggies and has no added fats or ingredients that are higher in calorie density.
I even show you how to sauté without oil if you are using a stainless steel pot! 🙂
Ingredients:
1 chopped white onion
2 chopped carrots
2 celery sticks, chopped
4 cubed Yukon golden potatoes
1 cup of brown lentils
4 minced garlic cloves
2 tbsp tomato paste
5 cups of water
2 bay leaves
1/2 tsp thyme
1/2 tsp oregano
1 tbsp basil
2 tbsp marjoram
salt to taste
pepper to taste
1 cup of crushed tomatoes (it is added at the very end of the recipe, right before serving the soup)
