A few of my favorite vegan breakfasts! Try these out next week:
1. Apple Cinnamon Oatmeal. Combine one container of Mush apple cinnamon overnight oats with a chopped apple, cinnamon sprinkle, and a drizzle of peanut butter.
2. Glowing Green Smoothie. This is my forever go-to green smoothie created by Kimberly Snyder. It’s got 4 stalks celery, juice of 1 lemon, 1 cup coconut water, big handful of spinach, 1 cup frozen mango, 1 apple, 1 pear, and 1 banana.
3. Japanese Omelette with Baby Potatoes. For the omelette combine 6 tbsp Just Egg with salt&pepper, 1/2 tbsp tamari, and 2 tbsp water. Cook as you would a normal omelette. Chop up 4 baby potatoes into 4 wedges each (chop each potato down the middle twice creating 4 wedges) then toss in avocado oil spray and a pinch of salt, pepper, and paprika. Air fry for 10 min at 400 degrees. Top with fresh basil.
4. Banana Pancake Bites. Chop up one medium banana. Create pancake batter with Birch Benders plant protein (about 1/2 cup batter combined with water) and toss the banana slices in. Use a spoon to place the batter coated banana slices on an oiled pan and cook as you would normal pancakes. Top with Lakanto maple syrup and berries.
5. Ciabatta Breakfast Sandwich. Toast a ciabatta roll and melt Violife cheese slices on top. On one side add a Japanese omelette (instructions above) and on the other add fresh basil, tomato slices, avocado slices, and salt&pepper.
