Vegan Avocado Dressing is a creamy salad dressing that’s healthy, delicious, and packed with fresh herbs and citrus.

Ingredients:
1 Avocado, seed and skin removed
1/4 cup Olive Oil
2 tbsp Fresh Lime Juice
1/4 cup Fresh Cilantro Leaves
1 tsp Minced Garlic
Salt and Pepper to taste
1/4 cup water, as needed to thin dressing
Instructions:
1. Add the avocado and olive oil to a food processor. Pulse to combine.
2. Next, add in freshly squeezed lime juice. Pulse to combine.
3. Then add in the fresh cilantro leaves, minced garlic and combine.
4. Taste the dressing, add salt and pepper to taste.
5. Use the water to thin dressing to your desired consistency.
6. Store in an airtight container in the refrigerator for up to one week.
