SAMI’S KITCHEN RECIPES – TEXAS CAVIAR BEAN SALAD
SALAD INGREDIENTS:
1 CAN OF BLACK BEANS (DRAINED)
1 CAN OF KIDNEY BEANS (DRAINED)
1 CAN OF BLACK EYED PEAS(DRAINED)
1 CAN BABY WHITE CORN (DRAINED)
1 CUP JARRED JALAPENOS (DRAINED)**
1-2 JARS OF DICED PIMENTOS
5-6 STALKS OF FRESH CELERY (CHOPPED)
1/2-1 FULL SWEET ONION (CHOPPED)
1/2 CUP OF FRESH CILANTRO (CHOPPED)
SAUCE:
1 CUP OF APPLE CIDAR VINEGAR
1 CUP OLIVE OIL
1/4-1/2 CUP OF SUGAR/SWEETENER (START WITH LESS AND TAPER UP)
** PLEASE NOTE I RECOMMEND THIS AMOUNT TO MAKE IT SPICY. PLEASE TAPER THIS INGREDIENT BASED ON YOUR PREFERENCE FOR SPICE
DRAIN ALL BEANS AND CORN IN A COLLANDER AND PUT IN A LARGE BOWL.
DRAIN JARRED JALAPENOS AND PIMENTOS AND CHOP NICELY AND PUT IN SAME BOWL AS BEANS.
CHOP OF CELERY, SWEET ONION AND CILANTRO NICELY AND PLACE IN SAME BOWL AS BEANS. TOSS.
IN A SAUCE PAN, TURN ON HIGH HEAT. POUR APPLE CIDAR VINEGAR, OLIVE OIL AND SWEETENER IN PAN. BRING TO A BOWL WHILE STIRRING. QUICKLY TAKE OFF HEAT AND POUR OVER BOWL OF INGREDIENTS.
MARINATE OVERNIGHT FOR BEST RESULTS.
