The perfect lunch or dinner idea. Who doesn’t love a hearty Pumpkin Soup that warms the whole body. This is such a super quick and easy soup recipe that tastes delicious and is a family favourite.
Ingredients:
2 Onions (diced)
2 Carrots (diced)
1kg Pumpkin (cubed)
4 C Chicken Stock (depending how thick you want the soup)
Salt and Pepper to taste
Handful of fresh Basil
½ Tsp Nutmeg
Method:
Combine onions, carrots, pumpkin, chicken stock, salt, pepper and basil in a large pot or pressure cooker.
Bring to the boil and simmer for about an hour or until pumpkin is well cooked through. If using a pressure leave on for 20 mins.
Use a stick blender to blend all ingredients together. Add the nutmeg and stir through, reheat and it is ready to eat. Serve with some fresh basil or a dollop of goat or sheep’s yoghurt.
