I love making tofu for breakfast. It’s a great vegan substitute for scrambled eggs that is full of protein, iron and calcium. Scrambled tofu stores really well. Just make sure to place it in an airtight container and it will stay fresh in the fridge for up to 1 week. Perfect for busy or lazy mornings 😀
