This Vegan Gluten-Free Orange Upside Down Cake is one of the simplest vegan cakes to make.
Here we use Blood Oranges but Mandarins and Oranges work beautifully too!
Ingredients (8-inch)
*1cup=240ml, 1Tbsp=15ml
*No Substitution Suggestions Unless Specified.
ORANGE
• 3-4 blood oranges (or oranges, mandarins)
• 1-2 Tbsp olive oil (or as needed// sub vegan butter or neutral oil)
• 1-2 Tbsp raw sugar (or as needed)
CAKE
[Dry]
• 1 cup gluten-free flour
• 1 ½ cups almond flour
• ½ cup raw sugar
• 2 tsp baking powder
• Pinch sea salt
[Wet]
• ½ cup unsweetened almond milk (plant milk)
• 1/3 cup olive oil (or neutral oil)
• ½ cup blood orange juice
* 1cup=240ml
Instructions
1. Pre heat oven to 180˚C/356˚F. Line 8” diameter loose bottom cake tin.
2. Grease the base of the cake tin & sprinkle over the sugar evenly.
3. Peel & cut oranges then lay them down into the cake tin, fill any gaps with oranges quarters or halves. Then set aside whilst making the cake mix.
4. In a large mixing bowl add the dry ingredients and mix well.
5. Combine all the wet ingredients together.
6. Pour in the milk/orange juice mixture and stir lightly.
7. Once the mix has combined, pour it into the cake tin.
8. Bake for 20-35 minutes.
9. Once the cake has cooked, allow it to slightly cool for 10 – 20 mins before removing it from the tin.
