    This easy no-bake vegan pumpkin cheesecake is super creamy with all our favorite autumn spices and rich pumpkin flavour. This pumpkin “cheesecake” is not only vegan but also, dairy-free, gluten-free, and free of sugar.
    A chocolaty crust, smooth, airy cream pumpkin filling, topped with coconut whipped cream. It’s the perfect dessert for any fall day!
    You can also make this recipe in individual ramekins. Hope you enjoy this delicious no-bake vegan cheesecake!

    Ingredients (6-inch)
    *1cup=240ml, 1Tbsp=15ml
    *No Substitution Suggestions Unless Specified.

    CRUST
    • ½ cup raw walnuts
    • 50g pitted dates
    • 2 Tbsp melted coconut oil
    • 2 Tbsp sunflower seeds (optional)
    • ¼ cup desiccated coconuts
    • 1 Tbsp raw cacao powder
    • 1 Tbsp cacao nibs
    • Pinch pink salt

    (*You can simplify the crust ingredients by omitting sunflower seeds and coconuts, and increasing the portion of walnuts and dates!)

    FILLING
    • 1 cup raw cashews, soaked overnight
    • 2 Tbsp full-fat coconut milk
    • 2 Tbsp olive oil
    • 1/3 cup maple syrup
    • 1/3 cup pumpkin puree
    • ½ tsp ground cinnamon
    • 1/8 tsp ground nutmeg
    • 1/8 tsp ground ginger
    • 1 Tbsp lemon juice
    • Pinch pink salt

    (*If you have pumpkin pie spice, you can use it instead of cinnamon, nutmeg, and ginger.)

    Serving option
    • Coconut whipped cream
    • Pecans
