Vegan Spaghetti Bolognese Recipe
2 big handfuls of cauliflower
1/2 block tempeh
1 handful of raw almonds
1 heaping tsp of dried Italian herbs
garlic powder
salt + pepper
red pepper flakes
1 jar of vegan marinara or tomato basil sauce
3 tbsp water
6-8oz of pasta
2-3 big handfuls of baby spinach
Preheat oven to 375.
Pulse cauliflower, tempeh, and almonds in a food processor until finely chopped and transfer to a baking sheet.
Season with 1 heaping teaspoon of Italian herbs, a generous sprinkle of salt, pepper, garlic powder, and red pepper flakes and bake for 10-12 minutes until golden brown and fragrant.
In the mean time, boil your pasta and warm the sauce on the stove.
Transfer the cauliflower mixture to the sauce along with the water and stir. Taste and season with more salt if needed.
Add pasta and spinach. Stir until wilted and serve with fresh basil and vegan parmesan cheese.
