This marble banana bread is moist and fluffy on the inside with that light golden crunch on the outside. It’s vegan, plant-based, and gluten-free! Just sweet enough with a hint of cinnamon and brown sugar and lots of banana flavor.

Ingredients (21cm x 11cm x 7 cm loaf)
*1cup=240ml, 1Tbsp=15ml
*No Substitution Suggestions Unless Specified.
• 1 flax egg (1 Tbsp flaxseed meal + 2.5 Tbsp water)
• 3 medium ripe bananas (plus 1 for topping)
• 1/2 tsp vanilla extract
• 3 Tbsp melted coconut oil
• 1/3 cup brown sugar
• 3 Tbsp maple syrup
• 1 Tbsp baking powder
• 3/4 tsp sea salt
• 1/2 tsp ground cinnamon
• 1 cup almond milk (sub other dairy-free milk)
• 1 1/4 cup almond meal
• 1 1/4 cup gluten-free flour blend (*I use my own blend)
• 1 cup gluten-free oat flour
• 2-3 Tbsp raw cacao powder
*Gluten-free Flour Blend
Brown Rice Flour: Potato Starch: White Rice Flour: Tapioca Starch (ratio 6:2:1:1)
• 3 cups Brown Rice Flour
• 1 cup Potato Starch
• 1/2 cup White Rice Flour
• 1/2 cup Tapioca Starch
Mix all the flours and starches in a large zipper storage bag or a bowl. Store gluten-free flour blend in an airtight container or a glass jar.
I use this blend in place of all-purpose or whole wheat flour.
