ROASTED VEGETABLE STUFFING
1 sweet potato, cubed
15 Brussel sprouts, cut in half
1 shallot, roughly chopped
1 tsp olive oil [5ml]
Crack of black pepper
Dash of salt
10-12 oz bread cubes from boxed stuffing mix
*please be sure to check ingredients to make sure it is vegan friendly Pepperidge Farm Herb Seasoned is
2 tbsp vegan butter [28g]
2 cups vegetable broth [480ml]
MASHED POTATOES
2 large russet potatoes
1/2 cup non-dairy milk, unsweetened and unflavored [120ml]
1/3 cup vegan sour cream [3 oz]
3 tbsp vegan butter [42g]

Salt to taste
Garnish with green onions or chives, black pepper, salt and vegan butter
CORNBREAD CASSEROLE
1 package of cornbread mix [15oz]
1/2 cup vegan butter, melted [112g]
1 cup non-dairy milk [240ml]
1 cup vegan sour cream [8 oz]
1 tbsp sugar
*optional
1 1/2 cups frozen corn [12oz]
1/2 cup vegan cheese [56g]
