VEGAN PUMPKIN SOUP RECIPE
路 1 Hokkaido pumpkin or butternut squash
路 1 large or 2 small onions
路 1 head of garlic
路 2-3 tbsp (25-40g) coconut or olive oil to coat
路 Salt
路 Pepper
路 Curry powder (optional)
路 2 cups (450mL) vegetable stock or water
路 400mL (13.5 oz) can coconut milk
路 Zest and juice of 1 lime
路 1 tbsp (6g) grated ginger
路 2-4 slices more chili as desired (optional)
路 Garnish with chili slices, chopped mint and scallions (optional)
