Vegan Loaded Nachos:
Ingredients:
Salsa of choice
Tortia chips
Two kinds of beans of choice ( I like Pinto/Black/Great Northern)
Shredded Vegan Cheese of choice ( I like Trader Joe’s brands)
Nutritional Yeast
Vegan beef crumbles (Optional- I recommend Impossible Beef or Gardein Beef Crumbles)
Recipe:
Preheat oven to 350F/190C
Add tortia chips to baking dish
Add salsa
Add beans
Add vegan cheese shreds
Top off with Nutritional Yeast
Repeat steps until dish is full
Place dish in oven for 12-15 minutes
Let cool for 5 minutes
Enjoy!
Vegan “Tuna” Lettuce Bowls
Ingredients:
1 can of Chickpeas
1/4 cup of sunflower seeds
Generous spoonful of Vegan Mayo
Pickles to liking
Splash of Pickle Juice to taste
Salt
Black pepper
Kelp (or seaweed)
Nori (I recommend Trader Joe’s brand but any kind of shredded seaweed works)
Garlic powder
Balsamic glaze ( I recommend Trader Joes brand)
Recipe:
Add entire can of chickpeas and sunflower seeds to bowl.
Pulse blend together until tuna consistency appears. Be careful not to blend hummus.
Chop pickles finely and add to bowl.
Add generous spoonful of vegan mayo.
Add splash of pickle juice to taste.
Add salt, black pepper, kelp, garlic powder to taste. (You can also add Nori to the mixture as well for a stronger fish flavor)
Mix ingredients until well combined.
Spoon mixture into lettuce bowls.
Garnish with balsamic glaze and nori.
Serve and Enjoy!
Cucumber Bites
Ingredients:
1 large cucumber or 4 mini cucumbers
Nutritional yeast
Salt
Black Pepper
Garlic Powder
Marjoram (Use any herbs you prefer)
Smoked Paprika
Hummus ( To add a surprise, use flavored hummus like garlice or red pepper)
Recipe:
Slice cucumbers
Assemble on serving plate
Spoon hummus onto cucumbers
Garnish with salt, black pepper, garlic powder, nutritional yeast, marjoram and paprika
