✅ Ingredients
• zucchini – 2,2 lb | 1000 g
• onion – 7 oz | 200 g
• garlic – 1 clove
• cream cheese – 7 oz | 200 g
• vegetable oil – 1,5 tbsp
• dried parsley – 1 tsp
• hot water – 4 cup | 1 l
• dried basil – ½ tsp
• pepper – to taste
• salt – to taste

– large saucepan
– carving board
– blender or mixer
📙 Preparation
1. Chop up the onions and garlic, cut the zucchini into half-moon slices.
2. Heat the oil in a saucepan over medium heat, add the onions, fry for 3 to 4 minutes over medium heat until golden, add the garlic and the spices, cook for another minute.
3. Add the cream cheese, the zucchini, hot water, stir well. Bring to a boil, cover with a lid, lower the heat to minimal and simmer for 20 more minutes.
4. Salt to your taste, stir, turn off the stove.
5. Puree the soup in a blender.
6. Serve your creamy soup hot, sprinkled with chopped parsley, basil and with croutons.

1. You can use any squash you like.
2. You can add potatoes to your soup as well : dice them and cook with the zucchini.
3. Add spices to your taste.
