Ep 2. Vegetable Upma recipe
When it comes to Indian recipes, especially breakfast recipes, eating veggies is a breeze! I never had a wrong idea of veggies, growing up. It all tasted so good!
This one is no different. This breakfast is super balanced and comes in under 15 minutes. So if you have just 15-20 minutes in the morning to spare, make it!! You will not regret it, trust me on this!
Your house is going to smell amazing as well.
You’ll need:
* 1 cup coarse semolina/Rava/Sooji, polenta could work too
* 1½ tbsp coconut oil or vegan ghee
* 2 tsp mustard Seeds
* 1 tbsp chana daal
* 1 tbsp peanuts
* 1 tbsp cashews
* 1 medium onion finely chopped
* 1 medium carrot finely chopped, brunoise
* 1/3 cup green peas
* Salt to taste
* 2 cups water water to semolina ratio 2:1
* fresh coriander/cilantro leaves to garnish
