Best vegan collard green egg rolls ever! I attend the Mayor’s Ball in Atlanta back in 2018 and experienced one of the best appetizers, collard green egg rolls. Only thing I thought they were too large for a formal party, in my opinion. I recreated them as mini bite sized egg rolls. This version is completely vegan. I make my own veggie broth, which I use to cook the collard greens. The wrappers are also vegan.

Recipe:
cooked collard greens
wonton or egg roll wrappers
oil for frying (grape seed oil used)
small bowl of water to seal edges
Cook collard greens. Drain the amount of greens using to make the egg rolls. Pat dry any excess liquid. Turn wrapper on a diagonal . Add a small amount of greens . Begin rolling starting at the point closest to you. Fold the sides in as you roll. To seal, simply rub water on the edge with your finger. Heat oil and fry until golden brown. Enjoy🌱
