Baked Portobello Mushrooms
Today I have a quick and simple video for a quick and simple recipe! This dish can be served as a side dish or doubled for a main dish. Super simple yet super tasty! Recipe below.

2 Tablespoons gluten free soy sauce or tamari
1 Tablespoon balsamic vinegar
1/2 teaspoon granulated garlic
1/4 teaspoon ginger
1 teaspoon dried rosemary
1/2 Tablespoon extra virgin olive oil
2 large portobello mushrooms, stems removed
1:30 You’ll need a shallow baking dish, preferably a glass dish to prevent the marinade from burning (and with a lid if marinating overnight).
Preheat oven to 400F (if making right away)
1:34 Add soy sauce, balsamic vinegar, garlic, ginger, rosemary and olive oil to the shallow baking dish, stirring well.
1:55 Add mushrooms and cover with marinade. Use those fingers to really rub it in!
2:14 Let sit for 15 minutes or up to overnight, stem side down.
2:19 Bake for 10-15 minutes, flip mushrooms over and continue baking another 5-10 minutes.
2:40 Slice and serve with a big green salad, side mashed potatoes, rice or quinoa, and/or grilled vegetables.
