â–º THURSDAY (Single-Serve Pumpkin Baked Oatmeal):
– 1/2 cup quick oats
– 1/2 teaspoon pumpkin pie spice
– 1/2 teaspoon baking powder
– pinch of salt
– 1 teaspoon vanilla
– 1 tablespoon maple syrup
– 1/4 cup non-dairy milk
– Optional chocolate chips
Bake at 350 for 20-40 minutes, depending on how dry you like it!

â–º SATURDAY (Chocolate Peanut Butter Smoothie)
– 1 frozen banana
– 1 tablespoon peanut butter
– 1 tablespoon cocoa powder
– Dash of non-dairy milk to thin
This recipe can easily be doubled or tripled! Don’t add milk to make banana ice cream. Add lots of milk to make a chocolate smoothie.
