Easy-peasy No Mayo potato salad | Vegan | GF
Ingredients:
– 1.2 kg potatoes
– 3 medium tomatoes
– 2 small onions
– 2 medium green bell peppers
– 100g pitted olives
– 1/2 tsp ground black pepper
– 1 tsp salt
– 3 tbsps extra virgin olive oil
Method:
– Peel and chop the potatoes into bit sized pieces
– Bring a pan of water to the boil and add 1/2 tsp of salt
– Add the chopped potatoes, cover with a lid and gently cook, being careful not to overcook
– Meanwhile, chop the rest of the vegetables into bite sized pieces and add to a suitably sized dish
– Drain the potatoes in a colander and add them to the chopped vegetables
– Sprinkle on the ground black pepper, the remaining 1/2 tsp of salt and pour on the olive oil
– Gently mix being careful not to break the potatoes too much
Enjoy as part of your main course or simply on it’s own!!
