► Vegan Breakfast Quesadilla: Fill a tortilla with refried beans and shredded vegan cheese. Heat on a skillet until crispy on the outside and hot on the inside.
► Sweet Potato “Toast”: Bake sweet potatoes in the oven until gooey and soft. Top with fruit, granola, nuts/seeds and a nut or seed butter of your choice!

► Banana Bread French Toast: For french toast batter, whisk together 1 cup non dairy milk, 1/3 cup chickpea flour, 2 tablespoons maple syrup and a pinch of salt. Allow this to sit for a few minutes while you cut up some banana bread and heat a little vegan butter on a skillet over medium high heat. Dip the slices of banana bread into the batter before frying on both sides for a few minutes until golden brown.
► Pressure Cooker Oatmeal: Place 1 cup of rolled oats, 2 cups of water and a pinch of salt into your pressure cooker and stir to combine. Place the lid on your pressure cooker, set the tab to sealing and cook on high for 4 minutes. Once the 4 minutes is up, manually release the steam. The liquid and oatmeal may have separated a little bit in the cooking processes, so just stir everything back together. Divide between bowls and top with whatever toppings you desire! This recipe can easily be doubled or tripled. The cooking time will remain the same.
