marinated parmesan tomatoes
ingredients:
– 1/2 cup canola oil
– 1/4 cup red wine vinegar
– good seasons italian seasoning packet
– 1/4 cup water
or you can substitute the above ingredients for a pre made italian dressing of your choice!
– 2-4 tomatoes (depending on how much you want)
– vegan parmesan cheese
– salt (as desired)
– pepper (as desired)
– basil as desired)
– minced garlic (as desired)
1. I start by making the italian dressing by adding the red wine vinegar and italian seasoning packet to a cruet and shaking it.
2. Then I add the oil and water and shake it again.
3. I slice up my tomatoes and place them in a sealable container.
4. I sprinkle the salt, pepper, minced garlic, basil, italian dressing and parmesan cheese over the tomatoes, in that order.
5. Then I let them marinate/ refrigerate for 3 hours – to overnight and serve!
