What you’ll need:
#1 Healthy Turmeric Bean Wraps
2 tortillas
a handful of cherry tomatoes, cut in half
1 spring onion, finely chopped
a handful of fresh basil
½ cup kidney beans (90g)
juice of 1 lime
salt + pepper to taste, optional
per wrap: 1 ½ tbsp hummus
⅓ tsp turmeric, ground
a pinch of black pepper
greens
avocado
sesame seeds
homemade hummus: 1 can chickpeas (240g)
juice of 1 lemon or 1 lime
1 tbsp white tahini
1 tsp garlic, minced
a splash of non dairy milk
salt to taste
¼ tsp smoked paprika, ½ tsp oregano (use any seasoning you enjoy)
#2 Crispy Roasted Almond Toast
2 pieces of bread
1 heaping tbsp almond butter
1 tsp chia seeds
pinch of salt
1 tsp maple syrup
a pinch of cinnamon
1 tsp flour (spelt, all purpose, whole wheat…)
2 tbsp non dairy milk
extra almonds for the top
toppings of choice → plain vegan yogurt, berries, agave …
#3 Banana Coconut & Chocolate Müsli Bowl
⅓ cup quick oats
1 ½ tbsp rolled oats
2 tbsp coconut
1 tbsp chocolate chips, semi sweet (or cacao nibs)
a handful of banana chip
a handful almonds, chopped
for the ‘milk’:
1 banana, frozen
1 cup light coconut milk OR coconut water
