INGREDIENTS
#1 Chocolate Zucchini Shake 0:00
1 small to medium sized zucchini, cut into slices then frozen (mine was 215g before freezing)
1 tbsp cashew butter (or peanut butter or almond butter)
2 tbsp unsweetened cocoa powder
a pinch of salt
½ tsp vanilla
¾ cup non dairy milk (180ml)
3 dates, I used deglet noor
2 tsp semi ground flax seeds
optional: 1 tbsp vegan vanilla or chocolate vegan protein powder (sub with 1 tbsp oats and perhaps 1 more date or 1 tsp maple syrup)
→ serves 1
#2 Caramelised Onion Avocado Toast 2:00
1 medium sized yellow onion
a lil bit of oil for the pan
salt, seasonings to taste
2 pieces of bread
optional: a bit of hummus or vegan cream cheese
a squeeze of fresh lemon juice
optional: vegan chili mayo, chili flakes, a pinch salt to sprinkle on top of the avocado
→ serves 1
#3 Tofu Nugget Bagel Sandwich 3:05
for the nuggets:
1 block firm natural tofu (200g = 7oz)
2 heaping tbsp plain hummus
1 tbsp white wine vinegar or lemon juice
1 tbsp soy sauce
1 tbsp nutritional yeast
salt to taste
spices of choice
1 tbsp cornstarch
fry over medium to medium high heat for 2-3 min on each side until golden brown – they’ll firm up on the inside a little bit, but not as much as If you’d baked them so if you do prefer them to be a bit more firm and you have some more time on your hands you can
bake them in a preheated oven at 180C for 18-22 min (put the nuggets on parchment paper!)
fry them like in the video then bake them for an additional 10 minutes
I don’t think it’s necessary though, they’re super yummy coming straight from the pan
→ yields about 9 nuggets
for the sandwiches:
3 bagels
9 nuggets
vegan cream cheese + sriracha
tomato slices
whatever else you wanna add
→ yields 3 bagel sandwiches
#4 Chocolate Cherry Rice Porridge 4:42
½ cup rice flakes (50g)
1 cup non dairy milk (250ml), more if needed
1 tbsp chia seeds
a generous pinch of salt
2 tsp maple syrup
about a handful of frozen cherries or berries
optional: ½ tsp vanilla
optional: ¼ cup coconut milk or soy cream (60ml)
1 tsp unsweetened cocoa powder for the top
→ serves 1
#5 Oat and Yogurt Pancakes 6:19
1 cup oats, small cut (90g) or oat flour
2 tsp baking powder
a generous pinch of salt
½ cup non dairy milk (125ml)
2 ½ tbsp vegan yogurt
1 tsp apple cider vinegar
2 tbsp sugar
→ serves 1-2
